Rice

Don't have a rice cooker? Then here's a really easy way to cook both white and brown rice.

With white rice, cover the rice in the pan with cold water so that when you place your finger in and touch the rice, the water level reaches the first knuckle on your finger. With brown rice (which take longer to cook) cover your second knuckle with the water level, and this should generally give you perfect rice each time.
Cover the pan with a lid, and place on full boil. keep watching the rice (preferably a clear lid works better), once the rice starts to form holes in it, take it off the heat, with the lid on, and leave to steam through, giving you perfect rice each time.

Add diced carrots, sliced onions, bay leaves, cinnamon sticks and /or peppercorns to the rice to add flavour. Also, cook the rice in stock to give it depth

Once cooked and cooled down, heat a frying pan with a little oil, fry off some onion, garlic, chilli and thyme, add more diced carrots, and once soft, add the rice. If you are not vegan, you can whisk a couple of eggs, add salt, and add to the rice mix to make egg fried rice. At the end, before serving, add green herbs and peas

There's no limit to what vegetables you can add to this dish, be as creative as you like.
