Bechemel

What you need:

 

 Butter

1ltr Milk

Bay leaf

Plain flour

salt

 

Method:

 

Warm the milk and bay leaf on a low heat in a pan.

Melt the butter in an other pan (make sure this pan is big enough for all the ingredients together), and once melted, sift in the flour (I use the 'half fat to flour' measurment) . Stir both together until it forms a dough. Then, using a ladle, pour 1 ladle only at a time of the milk onto the dough mix, mix together thoroughly, then add another ladle. Only pour over 1 ladel at a time, otherwise your bechemel will become lumpy, and make sure the milk is properly incorporated before adding more milk, keep doing this until all the milk is used. Season and leave on a low heat to cook out the flour, if it thickens too much, stir in some more warm milk.
